Quinoa Stuffed Tomatoes

It’s the 4th of the month– time for another Secret Recipe Club reveal!  Last month was so much fun.  I loved checking out all the blogs that are a part of Group A with me and to have them come over to Food Ramblings and comment on the Tomato Balsamic soup that I adapted from It’s Good to Be the Cook.  Beth also got my site, and I forgot that I even the Mexican Shepherd’s Pie that she tried.  It was cool to see that she found an older recipe and liked it so much!

This month, I was matched with Leandra of Love and Flour.  First off, I love the title of the blog! Second, she is a great writer.  I was really impressed with the great copy in each of her posts.  I chose to make Quinoa Stuffed Tomatoes.


In her post, she let all of us know of a little secret in her post where she shared the tomato recipe– she listens to audio books.  Leandra made it seem like a dirty little secret, but I was so excited to read that.

I LOVE audio books.  I spend a lot of time in the car for work, especially in large cities sitting in traffic. So audio tapes are my saving grace.  Imagine sitting on the 405 in LA for hours with nothing to do and no one to talk to.  Wait– that doesn’t happen to me because I have audio books!

People may think I’m crazy when they look in from the next lane when I am talking back to my book in the car, but I don’t care.  Anything to combat the boredom and road rage!  And I don’t listen to good audio books– my audio books come from the public library, and often they have slim pickings. So I pick the audio books with the prettiest covers and prepare myself to talk back to the books when the characters or the plot line are just plain silly.

But I feel like Leandra and I are kindred spirits because only so many people can tolerate audio books.

Okay, back to these quinoa stuffed tomatoes.  So absolutely delicious!  Leandra isn’t a huge fan of quinoa, but I could have absolutely added more to the mix– but it was perfect just as Leandra prepared it.

Looking through Love & Flour, there are so many other recipes I want to make.  Expect to see my versions of in the near future.

  • 5-6 medium tomatoes
  • 1/2 cup cooked quinoa
  • 1/2 cup Italian seasoning breadcrumbs
  • 1/3 cup green onions, chopped
  • 1/3 cup parmesan cheese, grated
  • 4 cloves garlic, minced
  • 1 tbs dried basil (mine was freeze dried)
  • salt and pepper to taste
  • mozzarella cheese, shredded
  • Servings: 3-4 as main course, many more as side dish
  • Difficulty: easy


Preheat oven to 350 degrees.

Core and halve the tomatoes, then use a spoon to gently scoop out the fleshy insides. Place the tomatoes cut side down to drain on paper towels while you prepare the stuffing.

Combine all remaining ingredients EXCEPT the mozzarella cheese in a large bowl. Dice the reserved tomato flesh and add this to the bowl as well. Stir well to combine and season the quinoa mixture with salt and pepper to taste.

Stuff the quinoa mixture into the tomato halves. Place the tomatoes, stuffing side up, in a lightly greased baking dish.

Sprinkle the tops with mozzarella cheese. Bake at 350 degrees for 25-30 minutes until the tomatoes holding the stuffing are soft. Sprinkle tops with basil before serving.
